Emer Murray, crowned by food writer John McKenna as ‘the best baker in Ireland,’ was an unhappy law student at NUIG. She came from a business and insurance agents background, and the law just didn’t have the excitement she thought it would have. One day her mother Ena told her that John and Anne Sherry were looking for outside caterers. They had recently taken over Lydon House, and wanted croissants and Danish pastries for their breakfast menu. Emer, who had a passion for cooking, went into O’Gorman’s bookshop, bought a book on making breads and pastries, and, that evening called round to the Sherry household with samples. She got the job.

I called into Martin Divilly's butcher's shop in Westside and picked out some treats from their quite amazing selection. They have practically every meat type available that you can think of, and of course much of their focus is on providing meat that is prepped and ready for the oven. I sampled some of the stir fries selection and can recommend the Hong Kong stir fry made with round steak, the Piri Piri stir fry made with pork, and the Mexican stir fry made with chicken. Perhaps the handiest way to cook them is to just pop it in the oven for 15/20 minutes and serve.

It’s easily forgotten these days, but that’s what it was all about at one time – using up fresh ingredients which would otherwise be wasted during the Lenten fast. And having a bit of a last fling, of course – literally, in fact, as tossing the pancakes soon became part of the ritual.
